Method

  1. Heat the oil and ghee in a pot. Add whole jeero and fry onions until golden.
  2. Add the meat along with the spices and allow to braise on high to seal juices.
  3. Add the tomato and cook on medium heat for 45 minutes until meat is tender.
  4. Layer in the cooked vegetables, followed by the fried potatoes. Gently top with rice.
  5. Cover tightly with foil or lid, and steam in the oven at 180°C for ± 1 hour.

Serve with: A cooling yoghurt and cucumber raita, lightly spiced with World Tea Spice.

Tip!

Let the pilau rest for 10 minutes after baking — this allows the flavours to settle and deepen.
